Harvest Time Salad

Ingredients
For the Salad:
- 1/2 cup chopped walnuts
- 1 bunch of spinach, torn into bite size pieces (or your favorite lettuce)
- 2 cup dried cranberries
- 2 large, fresh tomatoes chopped or diced
- 1 avocado (peel, remove pit, and dice)
- 1/2 yellow sweet pepper, thinly sliced
- 4 small radishes thinly sliced
- 1/2 red onion, thinly sliced
- (Optional: Boiled egg smashed and mixed in or slices on top)
- (Optional: Smoked Gouda cheese sliced or shredded)
For the dressing:
- 3 tablespoons of Old Orchard Apple Juice
- 3 tablespoons red wine vinegar
- 2 tablespoons of raspberry jam with seeds (or more to taste)
- 1/3 cup olive oil
- 1/4 teaspoon garlic powder
- freshly ground black pepper to taste
- dash of salt (to taste)
Directions
- Prepare all ingredients as directed and toss in a bowl.
- Use a dressing shaker or blender and mix all ingredients thoroughly.
- Serve the salad on a plate, drizzle with the dressing.
Optional: Serve with Croutons/Real Bacon Bits or bake up some fresh bread sticks
