Apple-Glazed Carrots

Skip the ol' steamed carrots and mix things up with a splash of apple juice for a burst of flavor!
Ingredients
Directions
- Heat a skillet over medium-high heat. Add olive oil
- Add the carrots and juice, then cover.
- Cook for 3-5 minutes, until carrots are tender, then remove cover.
- Remove carrots to serving bowl, continuing to cook the juice until it has reduced to a glaze.
- Pour the apple glaze over the carrots.
- Season with salt & pepper to taste
- top with fresh herbs. Serve warm.
