Apple-Glazed Carrots

Skip the ol' steamed carrots and mix things up with a splash of apple juice for a burst of flavor! 



  1. Heat a skillet over medium-high heat. Add olive oil
  2. Add the carrots and juice, then cover.
  3. Cook for 3-5 minutes, until carrots are tender, then remove cover.
  4. Remove carrots to serving bowl, continuing to cook the juice until it has reduced to a glaze.
  5. Pour the apple glaze over the carrots.
  6. Season with salt & pepper to taste
  7. top with fresh herbs. Serve warm.
