Tropical Orange Pineapple Cheesecake

Tropical Orange Pineapple Cheesecake is just the dessert you need to feel like you're on a small "getaway"!

Ingredients
Crust

• 1 1/2 cups crushed shortbread cookies
• 1/2 cup sugar
• 1/3 cup butter, melted
• 1/4 ground macadamia nuts

Filling

• 3 packages cream cheese
• 1 (6 ounce container) pineapple Greek yogurt
• 3/4 cup sugar
• 4 eggs
• 1 tablespoon vanilla
• 1/4 cup Old Orchard Healthy Balance Pineapple Orange Juice Cocktail
• pinch of salt

Topping

• 1 container of whipped topping
• 1/2 cup shredded coconut, toasted

Directions

1. Preheat oven to 350 degrees.
2. Grease a 9 inch springform pan.
3. In a small bowl, combine the shortbread crumbs and the sugar.
4. Add the butter and nuts, mix.
5. Press onto the bottom of a 9 inch pie plate and about a half inch up the sides.
6. Bake crust for about 4-6 minutes.
7. In a mixing bowl add the cream cheese, yogurt, sugar, eggs, vanilla, pineapple orange juice and salt. Mix well and pour into cooled crust.
8. Bake for about 45-50 minutes or until cheesecake is almost set. T
9. ake out and cool.
10. Top cooled cheesecake with the toasted cococnut.

Serves 6-8
